This base is designed for making a gelato base using the cold process methodprior to freezing. The cold process method of gelato-making does not require apasteurizer because the mixture is already microbiologically safe. which helpssave on production costs. preparation time. and space. This method is idealfor operators looking to produce large quantities of gelato quickly andefficiently. To prepare. mix with milk. sugar. heavy cream. skim milk powder. and dextrose.stirring for approximately 3-5 minutes. Slowly add in the Fabbri Delipasteflavoring of choice and mix for an additional 3-5 minutes. Add the mixtureinto your batch freezer and blend with Fabbrisoff emulsifier. if desired. toimprove the consistency of the finished product. Follow your equipment’sspecific instructions to prepare the batch. Once the finished product isextracted from your batch freezer and placed into your serving pan. blastfreeze for 30 minutes before displaying in your serving cabinet.
